CROCKPOT BUFFALO CHICKEN SALAD

In Ohio, it is crockpot season.

Here is the healthiest, easiest, most delicious buffalo chicken salad I’ve ever made. It curbed my family’s cravings for chicken wings. 

BUFFALO CHICKEN SALAD

  •  2 pounds of chicken breast 

  • ½ bottle of Primal Life Kitchen Buffalo Sauce 

Place chicken and half of the bottle of sauce in the crock pot. Cook on low for about 4-5 hours or until the chicken shreds easily. Shred the chicken and cook on low for about 45-60 minutes to allow the flavor to really seep in. 

We ate three ways: 

  1. Straight out of the crockpot with a side of white rice 

  2. Straight out of the crockpot served on romaine leaf 

  3. I took a portion of the chicken out of the crockpot and placed it in a bowl. I added diced carrots, diced red onion and then mixed it.  I added this to romaine leaves and served with crumbled blue cheese on the top.
